Chili Garlic Edamame

Frozen edamame heats through in a few minutes in the microwave, so there's no pot of water to boil. The sticky garlic-chili sauce clings to the pods, and you get it on your lips every time you pull out a bean. Salty, spicy and on the couch in twelve minutes.

  1. 1

Peel the 3 garlic cloves and chop them as finely as you can.

    • 3 cloves garlic
  2. 2

Heat the 1 tbsp of neutral oil in a large skillet over medium-low heat. Add the garlic and stir until it's fragrant and pale gold, 1 to 2 minutes. Pull the skillet off the heat if the garlic starts to turn brown.

    • 1 tbsp neutral oil
    • 3 cloves garlic
  3. 3

Stir the 1 tbsp of chili garlic sauce and the 1 tbsp of soy sauce into the garlic. Let it bubble for 30 seconds, until it looks glossy, then turn off the heat and leave the sauce in the skillet.

    • 1 tbsp chili garlic sauce
    • 1 tbsp soy sauce
  4. 4

Put the frozen edamame in a large microwave-safe bowl, add the 2 tbsp of water and cover the bowl with a microwave-safe plate. Microwave on high for 4 minutes, until steam is rising from under the plate. With a folded towel, lift the plate off, tilting it away from your face so the steam escapes away from you. Squeeze one pod through the towel: it should feel hot all the way through, and if it doesn't, cover the bowl again and microwave for 1 minute more. Holding the hot bowl with the towel, pour off any water left in it.

    • 12 oz frozen edamame in the pod
    • 2 tbsp water
  5. 5

Add the drained edamame to the skillet and toss with a spoon until every pod is coated in sauce. Drizzle with the 1 tsp of sesame oil, sprinkle with a pinch of salt and the sesame seeds and toss once more. Serve warm with an empty bowl for the pods; eat the beans by pulling the pods through your teeth. Refrigerate any leftovers within 2 hours.
