Chicken Caesar Wrap

Pulled rotisserie chicken and a bag of chopped romaine do the heavy lifting, so nothing gets cooked. Tossing the filling in the dressing before it goes in the tortilla means every bite gets some, not only the middle. Ten minutes, zero burners.

  1. 1

Tear the pulled chicken into bite-size shreds with your fingers or two forks, picking out any skin, bone or gristle, until you have 1½ cups.

    • 1½ cups pulled rotisserie chicken
  2. 2

In a large bowl, toss the chicken, 2 cups romaine, ¼ cup Caesar dressing, ¼ cup Parmesan and a few grinds of black pepper with tongs until every leaf is shiny with dressing. If using croutons, squeeze ½ cup in your fist over the bowl until they break into pea-size pieces, then toss once more.

    • 2 cups chopped romaine
    • ¼ cup Caesar dressing
    • ¼ cup grated Parmesan cheese
    • black pepper
    • ½ cup croutons
  3. 3

Stack the tortillas on a plate, cover them with a damp paper towel and microwave on high until soft and bendy, about 15 seconds.

    • 2 large flour tortillas
  4. 4

Lay one tortilla flat and pile half the filling in a line across the lower third, leaving about 2 inches bare on the left and right. Fold the left and right sides in over the filling, then fold the bottom edge up over it and roll away from you, keeping it snug, until the wrap is closed with the seam underneath. Repeat with the second tortilla and the rest of the filling.

Cut each wrap in half on a diagonal with a sharp knife and eat right away, while the romaine is still crisp. Put any leftover rotisserie chicken back in the fridge within 2 hours.
