Banana Oat Blender Pancakes

The blender turns oats into flour, so there's no flour to measure and one container to rinse. Ripe bananas bring the sweetness and hold the batter together, which keeps these soft in the middle and lowkey cake-like. Brown-spotted bananas work best.

  1. 1

Put the bananas, eggs, oats, milk, baking powder, cinnamon, vanilla and salt in a blender. Blend on high until completely smooth with no visible oat flakes, about 1 minute.

    • 2 ripe bananas
    • 2 large eggs
    • 1 cup certified gluten-free old-fashioned rolled oats
    • ¼ cup milk
    • 1 tsp gluten-free baking powder
    • ½ tsp ground cinnamon
    • ½ tsp vanilla extract
    • 1 pinch salt
  2. 2

Let the batter sit in the blender for 3 minutes so the oats soak up liquid and it thickens slightly.

  3. 3

Heat a large nonstick skillet over medium heat. Add 1 tsp of the butter and swirl until it melts and stops foaming.

    • 1 tbsp butter
  4. 4

Pour in ¼ cup of batter per pancake, 3 or 4 at a time, leaving space between them. Cook until bubbles cover the tops and the edges look dry, 2 to 3 minutes.

  5. 5

Flip each pancake with a thin spatula and cook until the underside is golden brown and the center springs back when pressed, 1 to 2 minutes. Move them to a plate.

  6. 6

Add another 1 tsp of butter to the skillet and repeat with the remaining batter. If the pancakes brown before bubbles form, turn the heat down to medium-low.

    • 1 tbsp butter
  7. 7

Stack the pancakes on 2 plates and drizzle with maple syrup.
